Thanksgiving came and it was a success due to the preparation I had done previously, including my planning and test cook. I was glad I did a test cook trying the spatchcocking and dry brining of the turkey. I was able to adjust a few things and had a great bird and the venison I cooked was great.
We had a great time with family and they all enjoyed the turkey and the venison. All the sides that were brought were tasty and the desserts finished of the meal spectacularly.
I'm cooking a turkey for the local rescue squad this next weekend and will do it the same way I did ours. It came out great

Thanksgiving Preparation - Test Cooking [Part 2]
I decided I was going to dry brine and spatchcock it. Cook it at 350ยบ with chicken broth under it to add flavor and use for a stock later. butterflying the turkey helps it to cook more evenly and quicker.

Preparing for Thanksgiving [Part 1]
The leaves have changed and the air has gotten colder. Fall has arrived and Thanksgiving is on its way (or past if you're in Canada). It's time to start thinking about giving the family the bird. Wait... that didn't sound right (like so many things in BBQ). Time to start thinking about cooking a turkey for Thanksgiving. I used to roast the bird in the oven, but no more. I now smoke it. Smoked turkey is great. I have had deep fried turkey, but it doesn't have that nice smokey flavor of a bird cooked over hickory and pecan wood. One day I would like to smoke the turkey then fry it to finish it of and get the best of both worlds.
As Thanksgiving draws closer I start to cook the bird in my head. trying to figure out the best way get the best flavor for the family. I also start to plan my cook so on Thanksgiving Day I will have time to cook it and relax. I'll share a little of what I do to prepare.

Turkey and Venison - 2012 Thanksgiving Cook
This Thanksgiving I tried some new things. If you can’t experiment on friends and family who can you experiment on? I planned to cook two turkeys and was trying for a crispy skin. In the past my turkey skin, while tasty, has been rubbery. Two ways I tried to fix this were by drying the turkey after brining and cooking hotter than I normally do. I also cooked a leg of venison. This was something new for me. I have smoked smaller cuts of venison before but never a whole leg.I did some research on the web to find out the best ways to achieve my turkey cooking goals and to cook the venison. I then planned it out and created a schedule of what I needed to do when. It made the whole process and cooking go much easier. Below is all the information on what I did.

But I also love the Holiday season, Thanksgiving and Christmas. In my mind, they are like a big, warm, fuzzy blanket that I can wrap up in and stay warm. I love the food, the traditions, the music, the lights, the fun and getting together with family.

Operation Thanksgiving Turkey 2011
This was the fourth year of Operation Thanksgiving Turkey (OTT). The first year we smoked 40 turkeys to feed 40 needy families in our area and this year we smoked 300. We involved our community and church to gain a pool of volunteers.
This year we had two churches involved. The first was First Baptist Church of Fort Mill. They were gracious enough to let us use their huge parking lot to camp out overnight and smoke the turkeys as well as their kitchen to prep all the turkeys. We cooked 250 of the turkeys there. The second church was Tega Cay Baptist. They prepped and cooked 50 of the turkeys.

How to: Smoking a Turkey 101
In 2009 a friend gave me an old smoker he never used. This was the start of a beautiful thing at my house. It was a couple weeks before Thanksgiving and I was trying to figure out what to make on it first.
