Recipe: Apple Pie Sopapillas
I wanted a dessert after grilling some food and came up with this. We had just bought apples and I wanted an apple pie something. I pulled out my pan and cooked up some apples and toasted the tortillas on the grill and I had something yummy.
Here is the recipe for this yummy dish.
8 tbls butter
Three apples cored and diced
1/2 cup of brown sugar
1 1/2 tbls sugar
1 tbls Cloister Bourbon Honey or more to taste
1 tsp cinnamon or more to taste
1/8 tsp nutmeg
Use a pan, I used an iron skillet, to melt the butter and add the diced apple on high heat. As it cooks add in the sugar and stir so the apples get coated with the butter and sugar. Sprinkle the cinnamon and nutmeg and mix it in and turn the heat to med. add in the honey and let it all simmer together.
Toast the tortillas in the oven or on the grill.
To serve place a toasted tortilla on a plate, add the apple mixture to tortilla and two scooped of icecream on top. You can use some of the juice in the pan to pour on the icecream or top with more bourbon honey. Walnuts or pecans on top give it a nice crunch.
