Grilled, Stuffed Pork Chops

I like to try new things on the grill. One thing I have been wanting to try are grilled stuffed pork chops. My wife and I have regular conversations about what to eat for supper and one day she said, "There are pork chops you can grill." That decided what I was going to make. I just had to figure out what I was going to stuff them with.

I had visions of nice, thick center cut pork chops that I could slice into to make a pocket. I was a little disappointed when I got home.

The chops were nice. Just not the thick center cut ones that are easy to make pockets in. I stuck with my plan though and modified it.

I took one onion and julienne it. Sliced some mushrooms and sautéed both in a pan with a little rub and olive oil. Once those were done I set them aside.

I took one of the thin pork chops and attempted to make a pocket in it. It was a lot of work but I succeeded. I then thought, "This is too much work. Plan B." Lucky for me the chops were all from the same pig so I was able to match them up.

I rubbed both sides of the pork chops and let them sit while I sliced some mozzarella to go in them. I laid one pork chop on a plate, laid the mozzarella on it and then the onions and mushrooms. I then put the matching pork chop on top making a pork chop sandwich.

Cooking.
I set the pork chops on the grill for five minutes a side. This got the out side done and the cheese melted which helped them hold together. I then cooked them another five minutes on the first side to make sure they were finished.

Second side.
I served the pork chops with green beans and salad. The family loved them and said this was a keeper. I just have to do it with thicker pork chops next time.
