Grilling a London Broil

It is odd to have it be so warm at the beginning of March here in SC. Our temps were in the upper 70s today so that made for a great evening to fire up the grill and make some good food. It doesn't take long and it tastes so good.

So Friday evening I grilled a london broil and made some sides to go with it. I decided to do a video blog about it too. I grilled the beef and roasted some garlic and potatoes to go with it. It came out great and the family loved it.

Roasted Garlic:
  • Bulb of garlic 
  • Olive oil 
  • Dried basil 
  • Foil
Rub off the outer skin of the garlic and chop the top of the bulb off. Place it on the foil and make a bowl to hold the garlic and oil. Pour about 2tbls of olive oil on top of the garlic and sprinkle the dried basil on top. Close the foil so the garlic is wrapped. Set the pack on the grill and let it cook while the meat is cooking.

Foil roasted potatoes:
  • 4 potatoes - cubed 
  • Olive oil 
  • Favorite rub 
  • Foil
Cut the potatoes into cubes and place in a large bowl. Pour olive oil on them to coat them and sprinkle liberally with rub. Mix the potatoes up so the oil and rub coats them. Add more rub as needed. Place on foil and make a pouch to hold the potatoes. place on the grill to cook while the grill heats up and the meat cooks. I also use this method with zucchini, summer squash and other similar vegetables.

London broil:
  • 1 London Broil 
  • Rub
About two hours before cook time sprinkle the rub on the meat and let it sit. Get the grill heated up. You will be using a direct cooking method for the meat. Before the meat goes on the grill hit it with some more rub. The meat should take about 20 minutes to cook (depending on thickness of the cut). After cooking for about 10 minutes flip the meat to cook the other side. The internal temperature you’re looking for is 145º for rare and 165º for well done. Once you reach the meat temperature you like, remove it and let it rest for about 15 minutes, carve and serve.
