Recipe: Grilled Bruschetta

My family loves Italian food and snacks. We love to try new things at home and one of our favorite appetizers is bruschetta. I was watching the Food Network and one of the chefs made grilled bruschetta. It looked good and I thought I can make that and make it better. So I did.

Ingredients:
  • Everything Italian bread (this is an Italian bread with lots of stuff on it)
  • 3 Cloves of Garlic
  • Fresh Basil (about 6 leaves)
  • Olive oil
  • Balsamic vinegar
  • 3 Roma tomatoes
  • Asiago cheese
  • Parmesan cheese
I start by boiling the tomatoes for a minute. Heat up a pot of water until it is boiling. Once you reach a rolling boil put the tomatoes in and remove the pot from the heat. After a minute remove the tomatoes from the water and let cool. Peal and seed the tomatoes (I always miss some of the seeds but I don't mind them). Rough chop them into small cubes and put them into a bowl.

Chop up the basil and add it to the tomatoes. I find if you roll the leaves of basil together they are much easier to cut. Once I chop the basil into strips, I chop it again to make it a bit smaller.

Crush two of the garlic cloves and add it to the tomatoes and basil.

Pour about one table spoon of olive oil and one teaspoon of balsamic vinegar on the tomato, basil and garlic mixture (I go by taste, so I'll add some olive oil and balsamic, then taste it and adjust). Mix it all together and set it aside until your toast is ready. (A little black pepper is good on it too.)

Fire up your grill to 350°-400°. Cut the bread into slices. Paint olive oil on each side. Place the bread on the grill for about one minute to toast the first side. Be careful because you can burn your bread quickly.

Remove the bread from the grill and place on a plate toasted side up. Cut one of the garlic cloves in half and rub it on each piece of toast.

Put the shredded cheese on the side you just rubbed with garlic and put the toast, untoasted side down, on the grill for a minute.

If the cheese doesn't melt, move the toast to indirect heat and let it sit for a couple minutes to melt the cheese.

Remove the toast from the heat and put a spoonful of the salad on each piece. Serve and enjoy.

  2. The toast with the cheese and garlic is good too. Would go great with spaghetti.
